    The Coffee

    San Cristobal is our latest coffee sourced from small holder farmers in the region of Chiapas, southern Mexico.

    Mexican espressos tend to be accessible to a range of pallets making them a fan favourite. We’ve selected San Cristobal to roast as a single origin espresso, as well as filter so you can brew this coffee any way you like.

    No sooner than your order arrives, you’ll be sipping on an exceptional cup of coffee, brimming with a smooth and creamy chocolate flavour, complemented by a delicate nuttiness and splash of peach.

    Something to note about San Cristobal is its relatively little-known varietal Marsellesa. Crossed between Timor Hybrid and Villa Sarchi in Nicaragua it tends to produce higher yields that are specifically rust resistant.

    The Producers

    The Producers

    Coffee is Chiapas' most important commercial crop and has a long history in the region, becoming a significant source of income for small producers.

    San Cristobal de las Casas improved their processing over the years which resulted in high-quality coffee, typified by a very clean cup with notes of caramel, nuts, and chocolate.

    Chiapas is a tropical region with significant variations in weather due in part to dramatic changes in altitude, meaning the soil is very fertile. Half the population works in agriculture, including coffee beans and producers here have learned how to process their coffee to ensure quality.

    After depulping the coffee ferments for 12 to 17 hours before being washed and dried on small drying patios next to farmers’ homes.

    The process is a labor of love, but one that pays of in the coffee they produce.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

      If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
