    The Coffee / Farm

    El Pedrero is our new crop washed Honduran that really pushes the levels of quality in Honduran coffee. It's very clean, super sweet and low in acidity, showing all the signs of a coffee that is going to be widely popular.

    It has a very smooth creamy milk chocolate body, with a subtle layer of raisin & damson sweetness. A tinge of acidity is present, but it's muted and sits gently in the background.

    It would be very at home in drip machines, Cafetiere's or the Aeropress.

    Honduras has become one of our most popular origins to source from over the last 4 years, with coffees like Capucas and Lepaterique, both being hugely popular.

    Most of the coffees we source from Honduras tend to be regionals, meaning they are coffees coming from a collective of small farms that are commonly a close knit community or coop. In this case, El Pedrero is actually a tiny single estate small farm of just 7 hectares, but falls within the collectives support and goals.

    It's a bit of a gem, and a pretty special little coffee.

    CONEXH S.A. was constituted February 7th 2021 with a vision to become a reliable ally in the origin's green coffee supply chain. They are a five generations old family business dedicated to the production of coffee owning 10 farms located in the emblematic Montecillos Sierra. This sits at a height ranging from 1450 to 1700 MASL with a coffee grown area of 200 hectares, including a variety of Arabica coffee plants such as Red & Yellow Catuaí, Pacas and Lempira.

    Through the years they have been building an alliance with local coffee farmers, today they have 40 members integrating our group called “Los Compaz”.

    CONEXH’s General Manager is Carlos Mejia, an Engineer also known as Chollo is born and raised among coffee plantations in his native Tutule and the driving force behind our operation from farm, processing and preparation to export the green coffee.

    The cooperative has integrated the processing of the fresh harvested coffee, with a traditional sun drying process over an area of 10 Hectares, under the passionate care of the founder and father of Chollo, Mr. Mario Mejía Martinez, a former employee of the Honduran Institute of Coffee (IHCAFE) specialised on coffee growing.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

      If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
