Ethiopia - Nano Challa (Washed) - Filter
Nano Challa is a bit of an iconic name in Ethiopian coffee. The name is associated with high quality, very clean cups that are typical of very well processed native heirlooms. For the last 2-3 years we have avoided buying it, as so many other roasteries bought and offered it, so we looked to offer an alternative coffee instead.
However, this years crop was so fantastic, we opted to take it on, as we didn't want to miss out on such a fantastic coffee. And we're super glad we did!
What's good about it?
As a filter, it typifies what's great about well farmed and processed Ethiopian coffees. Delicate, refined, sweet and complex. The lighter fast roast cycle of the filter draws out lighter, less intense notes with more citrus and a silky mouthfeel.
What's the best way to serve this coffee?
This coffee excels as a pour over (V60, Chemex or Kalita Wave etc), which will draw out its delicate fruit / floral notes. You could prepare it in a Cafetiere, Clever Dripper or Aeropress, offering you a slightly less complex full immersion coffee, but we don't think this presents this coffee in the best light.
Part of Nano Challa's strength lies in being part of the Kata Muduga Multipurpose Farmer's Cooperative Union. Since 2010, Nano Challa's membership has risen to over 400 and the quality improvements initiated alongside Technoserve have seen the coop's coffees become some of the finest, most sought after in the whole of the country. This has led to radically improving the livelihoods of farmers and their families in the region. Farmer members cultivate coffees at altitudes between 1850 and 2100 metres, and have around 3 hectares of land each, on average.
Once producers deliver coffee to the washing station, cherries are floated before being de-pulped using a Penagos Eco Pulper. The coffee is then soaked in clean water in concrete tanks for 8 hours before drying; firstly skin-dried and sorted under shade, before being sun-dried for approximately 10 days on raised African drying beds.
