Colombia - Popayan Hill (Washed) - Filter

Colombia is one of our favourite origins, for a number of reasons.

Firstly they have two crops a year (main and fly crop), so access to Colombian coffees are plentiful.

Secondly, as they are hugely flexible and varied coffees, in that they can offer great complexity suited to filter or espresso.  But at the same time, they can provide a good level of balance and accessibility, suitable for those that like more crowd pleasing coffees.

Simply put, the origin has a hugely varied output.

What's good about it?

This coffee is super flexible, so great for all styles of brewing (pour over or full immersion). If you're one for playing around with brew methods or want a coffee that everyone is going to enjoy no matter how they brew it then this one is for you.

Each part of this coffee can be made to shine in a different way. Experiment.

What's the best way to brew it?

This coffee excels as a pour over (V60, Chemex or Kalita Wave etc), which will draw out its delicate fruit / floral notes. You could also prepare it in a Cafetiere, Clever Dripper or Aeropress, offering you a slightly less complex but full bodied immersion coffee.

Popayan hill benefits high elevation, cool nights, good varieties, and intentional husbandry. A diverse and highly cultivated range of varieties span the hill which is shared by many small farmers and they all have one goal. To farm sustainable, high-quality coffee. The coffee grown here strikes a balance of high yielding and disease resistance to delicate, tangy acidity a balanced sweetness and a strong backbone of caramel or cocoa.

We roast on Tue, Wed & Thurs. Your coffee will be roasted within 5 days of purchase, with a shelf life of 6 weeks (optimum serving point of 10-36 days).
