Nicaragua - Finca La Escondida (Washed) - Filter
Finca La Escondida is only the second ever coffee we have ever sourced from Nicaragua and it's pretty special. We were looking for an exceptional central that would shine as a filter, not just by having intense or unusual flavours, but one that really stood out for it's clarity and sweetness. This is the first coffee we have chosen from one of our new coffee importers who pride themselves on sourcing exceptional quality and are prepared to pay the the farmers a much fairer price for their coffee quality. For this coffee, we are proud to of paid on average of 60% above market levels for this coffee.
Why this coffee?
We chose this particular lot for it's multiple layers of flavour and unusual acidity type. It's not an insanely challenging coffee in terms of flavours, but its very refined, sweet and moreish. The coffee is washed and de-pulped before being soaked in concrete tanks for up to 48 hours, allowing the remaining sugar in the coffee pulp to break down before being washed again to remove any residual fruit.
Finca La Escondida is situated at the tip of Nicaragua’s northern border with Honduras, nestled in the lush mountains of the Nueva Segovia region. In recent years this department has begun to establish itself as producing some of the best coffees in the country, with a great deal of success at the national Cup of Excellence competition. Farms in the area tend to be small, averaging around 3 hectares, but blessed with shade, nutrient rich volcanic soil and high elevations it makes for perfect coffee growing conditions. Finca La Escondida is privately owned by Mario José Vilchez and his family.
Coffee has a long history in Nicaragua and has remained the countries principle export crop since the 1870’s. However, the ushering in of communism and the subsequent war in 1979 not only made it a difficult environment to grow coffee but also a difficult environment to live. Mario José Vilchez was left with no choice but to move to the United States in search of a better life. Despite finding relative stability there he always yearned to return to his country, and in 1995 he returned and bought a plot of land hidden (La Escondida) from view of the main road, where he has been growing coffee on ever since.
Like all coffee from Finca La Escondida’s, this lot was processed at the local specialist dry mill Beneficio La Estrella. The mill is owned and ran by the coffee importer Caravela Coffee, who provide equipment and processing expertise that results in a higher quality coffee, better prices and more direct relationships with buyers throughout the world.
Catuai is a hybrid between the Caturra and Mundo Nova plant created by the Instituto Agronomico do Campinas in Brazil in the 1950’s and 1960’s. It is popular due to its high productivity and small, compact size, allowing easy access for the application of pest and disease treatment, very important to a plant that is highly susceptible to coffee leaf rust.
