Colombia - Popayan Hill (Washed) - Espresso
Colombia is one of our favourite origins, for a number of reasons.
Firstly they have two crops a year (main and fly crop), so access to Colombian coffees are plentiful.
Secondly, as they are hugely flexible and varied coffees, in that they can offer great complexity suited to filter or black espresso, while they often offer a good level of balance and accessibility, suitable for those that like more crowd-pleasing coffees.
What's good about it?
Popayan Hill offers the best of both worlds, depending on how you brew it.
As an espresso, it offers great complexity & limey acidity but also becomes very sweet (fudge like) when you add milk, so it's a bit of a win-win coffee.
It is sweet, clean and definitely a coffee that can be enjoyed by everyone, not just the purists.
What's the best way to brew it?
It works best in professional espresso machines such as a Rocket, Marzocco, Expobar (Pro-Sumer) producing a complex but full-bodied espresso. You can use it in the likes of a Rancilio Silvia, Gaggia Classic, De'Longhi or Dualit, but may struggle to get precise results when served black.
Popayan Hill benefits high elevation, cool nights, good varieties, and intentional husbandry. A diverse and highly cultivated range of varieties span the hill which is shared by many small farmers and they all have one goal. To farm sustainable, high-quality coffee. The coffee grown here strikes a balance of high yielding and disease resistance to delicate, tangy acidity a balanced sweetness and a strong backbone of caramel or cocoa.
We roast on Tue, Wed & Thurs. Your coffee will be roasted within 5 days of purchase, with a shelf life of 6 weeks (optimum serving point of 10-36 days).
